A Day With The Girls!!
Today, my granddaughter, Emily, and Double Great Niece, Trista, came to spend the day. We started out the day with Swedish pancakes.
I used to make these all the time for my kids, Karen & Steve, when they were young. Especially when they had a groups of kids over for a sleepover. The girls had lots of fun making these. This was their first time to eat Swedish pancakes and they loved them! I didn't have any powered sugar, so they decorated their pancakes with some icing mix I had on hand.
The Swedish pancake is more like the French crepe. Rather than syrup, the pancakes are usually garnished blue-berries, strawberries, or cherries and sprinkled with powdered sugar.
Ingredients and Preparation:
3 eggs
2 1/2 cups milk
1 1/4 cup flour
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons melted butter
1/2 teaspoon vanilla, optional
In a blender, combine all the ingredients above until smooth.
Heat a non-stick skillet over medium heat until very hot.
Lightly butter the skillet and pour 1/2 cup of the batter into it.
Swirl the pan with batter to expand to a thin layer.
Cook until bubbles form and the pancake is golden brown on the bottom, about 1-1/2 minutes. Flip turn and continue to cook for about one more minute.
Remove from the fry pan. It should not be necessary to add more butter to the pan for more pancakes.
When finished, top with the traditional dollop of berries or some other fruit of your choice and sprinkle with powdered sugar. YUM! YUM!

Next, the girls found a feather boa in my house and started dressing themselves up, so I thought I would just help them a bit and get out my red-hat goodies--feather boas, large brooches, gaudy jewelry, hats, umbrellas, etc. So, suddenly the day became a day they will never forget! I painted their fingernails, toenails, put makeup on them, got the curling iron and hairspray out and we did a complete makeover on these two nine-years olds girl. Did they ever have fun!! I tried to upload the pictures of them all dressed up like red-hat ladies, but blogger won't let me upload anymore pictures. I'll put them on my next blog as soon as the uploader works again. The girls had a terrific day and so did I, but am I ever tired! What a day!!

What a wonderful fun day you made for the girls. They will NEVER forget it or forget you for doing it. That is what life is all about.........making BEAUTIFUL memories for a new generation. Love you Sissy, JB
